What is Jun, you ask? Jun is a fermented tea very similar to kombucha but instead it uses honey as the nutrient rather than cane sugar. A traditional kombucha SCOBY (A.K.A. the culture) cannot use honey for a nutrient source as the naturally-occurring antibacterial properties of the honey will damage the beneficial bacteria of the kombucha culture. Jun SCOBYs have adapted over time to be able to use real honey as its food source, creating a sweet, distinct honey flavoured drink with the same probiotic and beneficial acids as kombucha. In addition to the health advantages of kombucha, consuming jun will expose you to the numerous benefits of honey. Raw honey contains amino acids, enzymes and polyphenols, which are powerful antioxidants that reduce free-radical damage and may help reduce the risk of heart disease and cancer. You can find two flavours of locally made kombucha on the shelves of this local store. Bruham Food Mart is a family owned and operated neighbourhood grocery store that has been serving the Valley for over 20 years. Bruham Food Mart is just off Boundary Road on Bruham Avenue, located between Brums Dairy and Colborne's Fish & Chips. The store is open 8:00 a.m. until 9:00 p.m. 7 days a week and boasts a large range of products including fresh produce, canned goods, baking supplies, dairy, and a bulk foods section. There is a deli, a bakery, frozen foods, and a meat department with fresh meat cut daily. Bruham will also take special orders for parties or specific requests and has gift certificates available. The friendly staff at Bruham know their customers by name and their excellent customer service certainly doesn't go unnoticed. Combine that with great weekly specials, and you have a recipe for a successful shopping experience. We traveled to Artizen Kombucha in Perth this past weekend to attend the 2nd annual Intimate Summit of Kombucha Brewers from around the area. The list of kombucha breweries is expanding and it was great to meet the makers and catch up with friends from last year.
In attendance this year were Pyramid Ferments, Buchipop, Vox, Vivo, Artizen, Laurentian Brew, Alex May - Kombucha Scientist, and the founders of Boochfest, Drew and Samira. Missing were Culture and Loon, as they both had prior commitments (the busy life of a microbrewer!). We enjoyed good food, tasty kombucha and bubbly jun, talked shop and shared equipment and brewing details. Alex discussed lab findings and shared his knowledge from his studies of kombucha in the U.S. (thanks Alex!). How cool is it that we can all meet together and unite as fellow brewers, helping build an alliance and shape the mold of the kombucha brand as a whole!? We're excited to be part of a growing industry that understands the importance of gut health and sees the benefit to offering an unpasteurized, small-batch, healthy alternative beverage. There are some great festivals coming up this Summer specifically showcasing the talents of local kombucha brewers including BOOCHFEST in Ottawa July 22, 2018 and the 2nd annual Ontario Fermentation Festival (founded by Pyramid Ferments) in Picton on August 4, 2018. Commercial and artisan brewers will be sharing samples and selling their product, and both festivals will also have an amateur home brewer contest. We hope to see you there!
